Where can I download this? and just how stable is it
It's pretty stable. We don't recommend using it on a production web site, but for your own personal use it's stable. And of course, upgrading is a snap!

Is there a change log for these nightlies? Or, do I download first and then look in the package (I dont mind doing that at all, I am just asking if there's a central place instead of loading servers by downloading)
Finally, here's a bit more complicated question:
I have actually downloaded and installed a 1.1beta. And I did so in a different directory (in the same server). What would I have to replace the old installation with this one (i.e same question as the above).

Yes, upgrading is just installing over the old files and visiting your website. There will be a link to complete the upgrade.
I'm not aware of a changelog.
To replace the old installation with the new, just copy the files over. You'll probably have to edit the serendipity_config_local.inc.php file to modify the directory.
