Fixed post on home page

Is there a way to stick a post as the home page and only display that entry on the home page?

Also, how about categories? Is there a way to have a specific post be the "home page" of a category?

If you install the "Extended Entry Properties" plugin, you can specify a post as "sticky". This puts it at the top of the page. While this wouldn't make it the only post on the page (unless you specified only 1 post on each page), it would put it right up on top.

You could also use an entry-hiding plugin (like the Newsbox) to remove entries from other categories.
